Cascara is the name for the cherry husk, or coffee cherry, surrounding each coffee bean. We sourced this Cascara directly from the coffee growers in El Salvador. Cascara has a very low level of caffeine and a complex fruity, slightly floral profile! To make this light sourdough, we grind up Cascara and make a tea out of it - using the tea in place of water, alongside flour, sea salt, and sourdough culture.
